When you have a large family and a small budget, you learn how to stretch your food dollar. Soda crackers and onions are less expensive than meat. Adding crushed crackers and onion to hamburger meant that everyone could have two small burgers rather than one.
But the serendipitous result of economy is a delicious variation on both the hamburger and meat loaf that is quick and easy to make. My mother made these at least once a week when I was growing up and I still love them.
INGREDIENTS:
1 lb. hamburger
1 medium onion
1 cup soda crackers
1 large egg
2 T catsup
1 tsp. Worcestershire Sauce
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
PROCEDURE:
Peel and chop the onion fine and crush the crackers into small pieces. Put all the ingredients into a mixing bowl and mix thoroughly with a fork or by hand. Form into patties and fry them in a medium hot skillet.
NOTE: To keep the burgers from sticking, grease or spray the pan lightly with vegetable oil.
